These pie pops are quite a bit of work if you make the pastry from scratch like I did. Homemade pastry is not as flexible/durable as pre-made pastry but it’s worth it for the flavour and texture! Homemade pastry is ALWAYS better!
I made two flavours of pie pops, cherry and pumpkin. (I just used pre-made canned pie filling to save time.)
