Christmas Pomegranate Spinach Salad

I had my parents over for dinner last night so I wanted to make a new salad.  As I was shopping in the grocery store I saw a picture of a gorgeous salad on the pomegranate display.  I couldn’t tell what else was in that salad but this spinach and pomegranate seeds was inspiration enough for me!  This salad would be great for a Christmas gathering with the red and green of the pomegranate and spinach and it’s the perfect time of year for clementines!

Christmas Pomegranate Spinach Salad -Recipe:

Ingredients:

-1 bowl of baby spinach

-a handful of pomegranate seeds

-a handful of walnut pieces

-1 1/2 clementines peeled and segmented

-1/4 cup of goat’s cheese

Dressing:

-1 1/2 tbsp balsamic vinegar

-3 tbsp olive oil

-1 tsp honey

-1 tsp dijon mustard

-salt and pepper to taste

Start with a base of baby spinach and sprinkle on top pomegranate seeds, walnut pieces, clementine segments and crumbled goat’s cheese.  Mix all dressing ingredients and pour over salad then toss.

This was a “make again” recipe and perfect for the Christmas season!
