I was tired, hubby was tired, dinner was just not going to happen tonight. Sometimes it’s ok just to eat something really simple. On that note, tonight’s menu included tortilla chips made from a soft tortilla I had in the fridge, some easy homemade guacamole, and a mango and pomegranate fruit salad for dessert.
To make the chips, use scissors to slice a soft tortilla into slices like a pizza. Lay them on a baking sheet and bake at 325 for about 15 minutes or until they are crisp. (Keep an eye on them though because they can burn quickly.) The guacamole does not have a real recipe. I just mash an avocado in a bowl, add a bit of pre-minced garlic, squeeze in some lime juice and drop in some chopped grape tomatoes. Mix it up and start dipping your chips!
The fruit salad really is just fruit, but if you want it a bit sweeter you can add a squeeze of lime juice and sugar then mix the fruit to coat it. But again, to keep it healthy, skip the sugar. The fruit is sweet and delicious enough on it’s own.
