Wow! Talk about easy cupcakes! Ok, so they’re not baked from scratch but, they were fast and easy!
One box of golden cake mix, one cup of canned pumpkin, one cup of water, 1 tsp cinnamon, 1 tsp nutmeg. Mix, pour into cupcake cups, bake at 350 degrees for 20 minutes. (This recipe made bout 18 cupcakes.) Ice the cupcakes. THE END! See? Easy, I told you!
I made my own pumpkin buttercream icing with butter, canned pumpkin, icing sugar and a dash of vanilla. But you could ice these cupcakes with almost anything, vanilla, chocolate, caramel, etc.
These were a hit with hubby’s colleagues! What? Did you think I kept them all for myself?
Lesson #1 of baking: Eat one to make sure they’re not gross and then give the rest away!
